Buddha Bowl

INGREDIENTS:

1 Chicken breast

1 Egg

½ cup 110g Quinoa or Brown Rice

Handful Spinach

2tbsp Sweetcorn

4tbsp Black Beans

½ Avocado

6 Cherry Tomato or 1 tomato

 

Optional dressing - Jalepeno Lime:

1tbsp lime

1tbsp apple cider vinegar

1tbsp honey or maple

2 tbsp olive oil

Pinch salt

2 small jalapeno peppers, seeds and stem removed.

 

DIRECTIONS:

  1. Grill or boil chicken breast (skinless) and then chop or shred

  2. Hard Boil egg, run under cold water and slice

  3. Rinse both black beans and sweet corn

  4. Add all the ingredients to a large bowl

  5. Top with dressing and mix

 

Dressing:

  1. Place the lime juice, vinegar, honey, oil and salt in the blender.

  2. Add 1 jalapeño pepper and puree until mostly smooth.

  3. Taste and add more jalapeños according to however much heat you like.

  4. Pour into a jar and refrigerate until needed.

  5. Shake well before drizzling Enjoy!

Note: start with one pepper and taste test.
