Cobb Salad

Fresh, tasty, high in protein, this is a fab salad that everyone will enjoy. It's perfect on its own or as a side dish too.

 

INGREDIENTS (SERVES 1)

1 egg

1 Chicken breast

1 Smoked Bacon

20g Blue cheese or shaved parmesan

½ Avocado

Lettuce

1 Tomato or 6 cherry tomatoes

French Vinaigrette (mix a little Dijon, white wine vinegar and a dash of oil, season with a little salt)

 

DIRECTIONS:

  1. Hard boil your egg, run under cold water and then dice finely.

  2. Prep your chicken, I would recommend either grilling, or boiling your chicken, which ever way your going to get the flavour you enjoy. Again finely chop

  3. Fry or Grill bacon until crisp, if you don’t like bacon turkey bacon works just as well or you can even leave this option out.

  4. Prep your salad, again all finely diced, I use a chopper, available to buy on amazon and it makes this super simple and quick.

  5. Pop all into a large mixing bowl

  6. Add French vinaigrette (no more than a tbsp)

  7. & mix

  8. If you don’t fancy the French vinaigrette your creamy avocado mixed in is always great for a dressing.
