Guac in a Jack (V, VG)

INGREDIENTS (Serves 2):

1 Avocado

Coriander

2 Spring onions

Lime

1 tin Black Beans

2 medium Sweet potato

Optional 30g feta / chilli flakes

DIRECTIONS:

  1. Preheat the oven to 180 degrees & line a tray with baking paper.

  2. Pierce the potatoes and pop in the Microwave for about 5mins (speeds things up)

  3. Pop your potato in the oven and Bake for around 25-30 min

  4. Smash up the avocado in a bowl

  5. Add finely cut spring onions, a squeeze of lime & 1 tbsp of finely cut coriander.

  6. Rinse the Black Beans & mix into the guacamole.

  7. Let the potatoes cool for about 5 mins and then gently fold open and fluff up the insides

  8. Fill will your Guac mix and sprinkle if you wish with a little crumble feta or chilli flakes.
